Mission: Sensory Science Education for Spirits Evaluation

Sensorium LLC (our operating name) provides sensory science students and beverage industry professionals with a practical, evidence-based framework for accurate evaluation. By integrating the principles of physics, chemistry, and sensory science, we can replace outdated myths and traditions with rigorous, reproducible methodologies.
Serving Sensory Science
Sensorium LLC’s mission is to equip students, professionals, and enthusiasts to evaluate with clarity, accuracy, and intellectual integrity. We achieve this through practical application and rigorous methodology designed to build expert evaluation skills. As a publisher of sensory science texts and educational materials, we specialize in the science of beer, wine, and spirits. As a result of our extensive research, we are pleased to release our debut textbook and sensory guide, Distilled Spirits Sensory Science, authored by George F. Manska. This text marks the beginning of a growing collection of professional resources for the serious spirits evaluator.
Why Sensorium?
Sensorium is defined as the collective regions of the brain or mind that receive and interpret sensory stimuli. Effectively, the brain’s sensorium processes smell, taste, mouthfeel (chemesthesis), sight, and sound into an integrated experience. Sensorium Publishing Co., LLC applies this scientific concept to distilled spirits, treating evaluation as a measurable sensory perception rather than a subjective opinion. By linking aroma and flavor chemistry, production variables, and human physiology, we identify the specific mechanisms behind what an evaluator detects and reports. As a result, Distilled Spirits Sensory Science approaches sensory literacy as an evidence-based, professional guide and text.
Our Values Support Professional Sensory Science in Spirits Evaluation
At Sensorium, we advance sensory education through accurate, repeatable, and evidence-based methodologies. We prioritize precision measurement, standardized procedures, bias mitigation, and intellectual honesty. Accordingly, reliable skills are built through clear definitions, mechanism-based explanations, and rigorous bias reduction.

In fact, searching for usable, applicable, science-based sensory information, we have discovered that some bloggers, critics, spirits judges, and consumers base their purchasing decisions on emotional marketing. Additionally, they may rely on personal opinions and use personal verbal descriptors unique to each person. As a result, their terminology may not resonate with those who are seeking reliable purchasing information. For instance, common terms such as “smooth” have different meanings for different individuals. As a result, they are not communicative descriptors. Hence, the need for a standardized lexicon.
Organized, standardized lexicons and their adoption by all who evaluate, judge, and rate spirits will improve understanding of the characteristics, attributes, faults, and flaws of all spirits. In fact, there are no other readily available, collected sources of credible information. In particular, our research has identified and compiled the information necessary to establish a robust, utilitarian, expandable lexicography framework. Distilled Spirits Sensory Science benefits students, instructors, distillers, and industry educators in a logical, rational presentation.
The Spirits Industry Benefits from Applied Sensory Science
Standardization benefits all industries, and the spirits sector is no exception—provided marketing shifts its focus from emotional appeal toward quality and character. Not only does standardization elevate overall quality and promote unique, niche flavor profiles, but it also enhances brand recognition. The industry has long had the opportunity to embrace a scientific approach; given the growing interest in science among future generations, that time is now.
